Bajel is the hotel’s high-concept fine dining restaurant which serves local seasonal products prepared with creative and meticulous elaboration in the artistic open kitchen. Think octopus with green mole and wild Mexican herbs, duck confit enchiladas with foie gras and spicy green ceviche with baby scallops, lychee and coconut.
