Hart Bageri Is A Copenhagen Bakery You’ve Gotta Try

Started by former chef at SF’s Tartine.

In the city’s Frederiksberg area, a new bakery in Copenhagen is making bread lovers very happy.

If you’ve been to San Francisco’s Tartine bakery, which is famous for its sourdough, then you’ll want a tasty loaf at Copenhagen’s Hart Bageri. Opened in September 2018 to lines around the block, Hart Bageri came to life because of two important players: René Redzepi and Richard Hart.

Known for Noma, Redzepi has spent the last few years investing in other restaurants, mainly ones that are created by chefs who worked at Noma. Hart, on the other hand, was the head baker at Tartine in the Bay Area, and created numerous recipes that are now world-famous. According to Eater, the two met five years ago, with the plan to open an innovative bakery concept.

Hart Bageri is the grand result. It features Tartine-esque sourdoughs that has become part of Hart’s signature, but he is also putting his own spin on traditional Danish-style pastries. In addition, Hart also supplies all the breads for Noma restaurant.

No need to expect traditional French options, like pain au chocolat or croissants. But there will be takeaway loaves and viennoiserie. In time, Hart plans to serve quick meals and sandwiches.

With so many food options in Copenhagen, now you have one more adding to the list. Especially if you’ve got a sweet tooth.
