Chi-town is known for its vibrant food scene. Tonight, there’s yet another restaurant opening considered as one of the most anticipated of this year.
Pacific Standard Time is located in River North, and led by Executive chef/co-owner Erling Wu-Bower and partner Joshua Tilden. They’re bringing folks a blend of Italian and Mediterranean influences derived from a Californian foundation.
Having a food writer and chef Olivia “Liv” Wu as a mother, chef Wu-Bower brings an assortment of authentic pizzas, pastas and main dishes from his childhood filled with Chinese influences.
Hence, expect to see Asian-fusion dishes, including: pork and shrimp dumplings, ricotta dumplings, Harry’s Berries Strawberries (yogurt, snap pea, sumac, hazelnut, 1979 bread), and a whole-roasted duck on the menu. In addition to 160 seats, there will be a 62-seat private dining room.
The Cali vibe will undoubtedly be presented in PST’s cocktail menu, and its selection of brews featuring: West Coast’s Anchor Steam, and Ballast Point. Don’t be surprised if you see an evident connection from Oregon to Washington.
