Why Californios Is So Special
Californios was founded by Chef Val M. Cantu, whose vision was to elevate Mexican cuisine using the finest Californian ingredients and produce while honoring the flavors and traditions of his heritage.
Unlike traditional Mexican restaurants, Californios offers a multi-course tasting menu that blends authentic Mexican techniques with contemporary culinary artistry. Every dish is meticulously prepared, creating an experience that feels both familiar and completely unexpected.

The 13-dish tasting menu started with a fancy Sope, a traditional Mexican dish – the thick, hand-formed masa base was lightly crisp on the outside with a soft, pillowy center, offering a warm, toasted corn flavor that’s both earthy and slightly sweet. The stack of caviar on top indicated a decadent start to a luxurious food journey.

Then moving onto the gorgeous which delivered a perfect balance of richness, freshness, and crunch in every bite. The bluefin tuna is buttery and melt-in-your-mouth tender, with a clean, delicate flavor that highlighted exceptional quality.

The iconic Flauta was artistic though delicate, combined with Dungeness Crab’s subtle sweetness, the dish was elevated by New Potatoes that brought a silky though creamy texture and created a harmonious balance of crisp, sweet, and savory flavors that were both comforting and refined.

The Aguachile Rojo with lobster was vibrant, refreshing, and layered with complex flavors. Tender chunks of sweet, succulent lobster were bathed in a bold red aguachile that punctuated bright citrus acidity followed by a gentle, lingering heat. The combination of blood orange and Cara Cara orange added natural floral, tangy notes that gorgeously balance the spice, creating a sauce that’s both lively and refreshing.

The ceviche of fresh Monterey abalone was remarkably delicate, clean, and full of layered umami. The abalone contained a tender yet pleasantly firm texture, provided a subtle ocean sweetness with a minerality that shined through in every bite. Served in its shell, paired with a silky abalone gelée that intensified the shellfish’s natural briny flavor.

The Flan de Plátanos Asados was an unexpected interplay of sweet and savory flavors. The grilled banana flan was caramelized with notes of toasted banana, brown sugar, and a subtle smokiness from the grill. Its natural sweetness was complemented by a jamón Serrano and date jus, which brought a slightly salty depth balanced by the molasses-like character of the dates. A spoonful of Tsar Nicoulai Estate Caviar transforms the dish by enhancing bursts of saline that was a delightful contrast.

The signature Mezcal Battered Local Black Cod tasted just as incredible as it looked. The sourdough tortilla brought a fermented tang and chewy texture that set it apart from a traditional corn tortilla. Wrapped inside is flaky local black cod coated in a mezcal batter, lending tender smokiness that complemented the fish’s natural character without overpowering it.

Pescado Tatemado en Estilo Matsukasa celebrated the freshness of Northern California with the mild though crunchy rockfish, wrapped by Hickory Gold tortilla which contributed a warm corn aroma with exquisite roasted notes, infusing a sturdy foundation for the fish. A tomatillo sauce brought a vivacious acidity while kohlrabi sang a juicy punch and a mild peppery character. Chayote introduced a refreshing trait with a faint tartness of the tomatillo. Together, this was a taco that symbolized balance from start to finish.

The Carne Guisada produced a deep, slow-developed flavor with meat that effortlessly pulled apart, and elevated by a salsa of black trumpet mushrooms and chicatanas—the prized flying ants used in Mexican cuisine—which created an earthy, nutty, and roasted notes that add remarkable complexity.

Mole Californios was paired with smoked California squab was a layered exploration of spice, smoke, and tradition. The mole carried a complex blend of roasted chiles, cacao, and spices, fusing a sauce with bittersweet undertones of warmth, and a lingering profoundness that unfolded gradually on the palate.
