When it comes to THE most classic restaurant in Bangkok, there’s only one name that comes to mind: Blue Elephant. Chef Nooror Somany Steppe is not only one of the best chefs in Thailand, she’s also the Mama Bear of modernizing Thai cuisine.
After 37 years, chef Nooror has mastered the art of modernizing classic Thai cuisine, making Blue Elephant incredibly popular today. It often attracts worldwide celebrities and diplomats. Even U.S. Presidents have frequented her restaurant. The celebrity chef takes other cultural influences and executes them in her dishes. She’s particularly fond of the French approach.
With 8 restaurants in 7 countries around the world, chef Nooror has won numerous awards. As a branding machine, her own product lines includes ready-mixed recipes of Thai sauces, curry pastes and powders exported to over 30 countries. She also fosters young female chefs in her kitchen with a cooking school for locals and travelers. She credits Thai universities for cultivating the next generation of talents.
Since November 2011, Blue Elephant has catered for Thai International Airways’ Brussels and Bangkok route. Today, she creates new Thai dishes using Royal Project, a non-profit organization conducted by Patronage of His Majesty the King of Thailand. It aims to solve problems of poverty and opium production by promoting alternative crops in Thailand.
